We grow three types of shellfish in the rich, clean waters of Totten Inlet—each with its own flavor, texture, and story. From the sweet & salty Pacific oyster to the mineral & complex native Olympia oyster to the hearty & versatile Manila clam, every meal reflects the care we put into our work.

  • Our Pacific oysters are deep-cupped, clean, and briny with a sweet finish. Grown in the rich waters of Totten Inlet, they grow fast and develop strong shells and a well-balanced flavor—making them a favorite for both raw bars and backyard grills.

    • A squeeze of lemon or a classic mignonette

    • Dry sparkling wine or crisp Pilsner

    • Grilled with garlic herb butter or ponzu sauce

Pacific Oysters

Fun Fact

These oysters are originally from Japan but have become a staple in Washington's shellfish culture. Their shells often reflect the unique tide patterns of each inlet—no two are quite the same.

Olympia Oysters

  • The Olympia is Washington’s only native oyster—small in size but rich in character.

    Olys pack an intense, coppery flavor with notes of seaweed and sweet cream. They take years to mature and are harvested in small batches, making them a rare and special offering.

    • A dry white wine like Sauvignon Blanc

    • A simple champagne mignonette

    • Sipped solo like a fine whiskey—no toppings needed

Fun Fact

Once nearly wiped out due to overharvesting and pollution, Olympia oysters are now making a comeback thanks to restoration and commercial aquaculture efforts. Your bite supports that legacy.

Manila Clams

  • Our Manila clams are sweet, tender, and quick to cook.

    Harvested from clean tidal beds and hand-dug at peak size, they’re a weeknight staple and a crowd favorite. You’ll love their buttery texture and slightly nutty finish.

    • White wine, garlic, and butter (classic steam prep)

    • Coconut milk curry or linguine alle vongole

    • Crusty bread and friends

Fun Fact

Despite their name, Manila clams are originally from Japan. They’ve adapted beautifully to the Pacific Northwest and help keep intertidal ecosystems clean by filtering water as they grow.
